Paleo Chocolate Mousse

For Valentine's Day, or any day for that matter, I desire a chocolate dessert. I found a recipe for a paleo chocolate mousse from Primal Palette. Since it is just the two of us, I shortened the recipe. Also, Rob doesn't like raspberries (my favorite!) so we had to change that up. You can use any berry or fruit in this recipe. I tossed the chocolate mousse with blackberries for Rob and he still enjoyed his. Since you use individual soufflé dishes, you can use anything you want. I would like to try pineapple next time. It's simple to whip together; could definitely be used for that last minute idea or craving. My recipe makes two small servings.

Paleo Chocolate Mousse

3.5 oz 70% dark chocolate, chopped into bite-sized pieces
1 egg
1/2 tsp vanilla extract
1/2 cup of coconut milk, scalded
Fresh raspberries (or any berry) for garnish

1. Blend chopped dark chocolate, egg, and vanilla in a high speed blender until smooth.
2. In a small saucepan heat coconut milk until almost boiling, you will see steam rising from the milk, but it should not be bubbling yet.
3. Slowly pour the scalded coconut milk into the blender and blend until smooth. 
4. Place as many fresh berries in the bottom of soufflĂ© dishes.

5. Pour chocolate cream mixture into the souffle dishes over the raspberries.
6. Cover each dish and chill in the refrigerator for two hours.
7. Garnish with shaved dark chocolate and a fresh berry. (I used chocolate chip to garnish mine)

Sunday Funday

Oh my, I knew I hadn't posted in awhile but it's been a long time! January kept me so busy at work. We didn't do anything exciting that month which is the main reason I haven't posted. Rob was able to go to Atlanta for a weekend and visit his family. But that's the most exciting thing!

Finally February has arrived! We have lots planned this month. We kicked off the month with Robs racing experience. I had given him a ride-along experience with Rusty Wallace for our one-year anniversary. Remember our Formula One weekend? Well we didn't have the chance to do the racing until now. Rob had so much fun! They drove up to 120 mph around the track. I was scared but he loved it!

Afterwards we decided to head to Gruene. This is such a cute town! So small; glad we only planned on spending the afternoon there. We shopped all the antique shops. There is a wine tasting place on the main street. We tried some wine and enjoyed each other's company over a glass. The weather was perfect. We went to the famous Gruene Dance Hall but unfortunately they weren't playing any live music at the time. We then enjoyed a meal at the Gristmill. A friend told us to sit next to 'Lupe'. We kept debating if we should ask...what if this meant we would sit next to a stuffed bull?! I asked to be seated next to Lupe and it was the best seat in the place! We sat overlooking the river. They had the windows opened and it was beautiful! A beautiful ending to a much needed relaxing Sunday!
