Fall Must-Haves

Oh my gosh, I wish it would cool down! I am so ready for fall and it is killing me that the weather isn't yet. I have got my whole wardrobe switched over for fall and I wanted to share some of my favorite things. I am crazy for anything in these three colors: wine, navy, and emerald. I have found it is so easy to pick a color each season and base all my shopping on that. That way everything coordinates and I can wear stuff multiple ways. This season I couldn't pick one so I went for all three. What is nice is that my spring wardrobe was blues so I will be able to mix some of those pieces with my fall wardrobe!

Here are my must haves!

1. Vest- I have always wanted a fur vest, but I just don't think I could pull it off. So when I saw this vest at J Crew I thought it was perfect! Also, everyone keeps telling me if doesn't get cold enough here for a coat, so I think I will be wearing this a lot!


2. Leopard- I didn't realize it until I organized my closet, but I really like leopard this season! I have the perfect scarf to dress up as well as some cute leopard smoking slippers. Just add it on like a little spice to your outfit!

3. Kendra Scott- OMG, I love anything Kendra Scott makes. Her earrings are such easy add-ons to an outfit. But I really love her long necklace. It makes accessorizing so easy!

These are just extra items to add on to your fall wardrobe. Don't forget the basics: denim, good pair of riding boots (both brown and black!), and a casual sweater coat. Leather is a huge trend right now, but I am not really jumping on that train. It looks super cute on everyone I see wear it, but I am just not brave enough! What will you be wearing this fall?

Sweet Potato Shepard's Pie {Paleo}

Since starting Paleo we have had to cut out some of our favorite foods. Mine being mac & cheese and Rob's being most of his Irish roots. I have been looking for a good Shepard's Pie recipe that was with sweet potato and I finally found one! I made some changes to the original recipe to make it Paleo. It was so yummy; Rob gave it an A+! I cooked the meal in individual bowls to make it more interesting. I highly recommend it even if you are not Paleo. Also, enjoy with some Oktoberfest to wish fall to hurry along!

Sweet Potato Shepard's Pie


Potato Top:
1 1/2 lb sweet potatoes; peeled, diced
3 cloves garlic
1/2 cup coconut milk
1/4 cup chicken broth (gluten-free)
salt and pepper to taste

Filling:
1 lb lean ground turkey
1 tsp olive oil
1 medium yellow onion, diced
1 celery stalk, chopped
3 carrots, diced
1 parsnip, diced
2 cloves garlic, diced
10 oz frozen green peas
1 cup chicken broth (gluten-free)
2 tsp tomato paste
1 tsp Worcestershire sauce (leave out to be completely Paleo)
1 tsp dried rosemary
salt and pepper
smoked paprika


Boil the sweet potatoes and garlic in a pot of salted water until cooked and soft. Drain and mash with chicken broth, coconut milk, salt, and pepper.

Preheat oven to 400 F.

In a large saucepan, brown turkey seasoning with salt and pepper. When cooked set aside. Add olive oil to pan, add the onion and saute for one minute. Add the celery, carrots, parsnip, salt and pepper. Cook about 12 minutes or until the celery and carrots are soft. Add the garlic, frozen peas, chicken broth, tomato paste, Worcestershire sauce, rosemary, cooked turkey, and mix well. Simmer on low for about 5-10 minutes. 


Either in individual bowls or a big dish, add the meat mixture. Top with the mashed sweet potatoes and smooth over the top with a spatula. Sprinkle paprika on top. Bake for 20-30 minutes or until the potatoes turn brown. Let cool for 10 minutes before serving.

First Week in San An!

We just completed out first full week in San Antonio! I have been here for three weeks now, but Rob didn't move down till last Wednesday. It is so good to have him around and both of the kiddos at our feet!


The whole family seems to like San Antonio. The mornings and evenings are so much cooler, with a pleasant breeze. Now that Rob and I are working the same hours we are able to eat dinner every night together. We have been waiting for this for over 2 years! 

We finally had our first date night Saturday night. We went to the Alamo Drafthouse for dinner and a movie. We saw 'We are the Millers'. It was so funny! The Alamo Drafthouse had a wonderful selection of beer and an upscale menu. We really enjoyed ourselves!


We walked around this outdoor shopping area we have right across where we live. It has cute little shops, such as White House Black Market, plus a Super Target. I had visited a hair salon in the same area on Friday and loved it! It's nice to have so much so close to us.


This afternoon we went to lunch at a little place downtown. It was the best food we have had it! It's a little restaurant called The Cove. They serve only local, organic food. They are well-known for their fish tacos, which neither of us got. Rob had shrimp tacos and I had a Bleu Buffalo burger. Both were outstanding! The best thing was their beer selection. They only served Texas beer, but had a huge selection!



If you ever come visit, expect to eat here! It was so good! We spent the rest of the day hanging photos and pool side. There will be a post soon about our place, I promise! Have a great Labor Day!
